Fit Features of the Week

There was a tie this weekend for most popular recipe from Fit and Fabulous Fridays.  The winners are Eat, Recycle, Repeat for their Uncool Fudge and Living Crunchy for these delicious Paleo Stuffed Peppers!  Both of these healthy recipes look amazing!!

All I have to say is WOW, I love this fudge........
The presentation is gorgeous!  I love the Fleur de Sel addition on this inviting bowl of chocolate heaven.  Best of all, this is HEALTHY fudge!  Yes, you heard me, fudge with no guilt...and that, my friends, is a beautiful thing.  The base of this fudge is......well, you need to go visit Eat, Recycle, Repeat to find out.   The secret ingredient to this fudge makes it creamy, rich and super nutritious.  I can't wait to make this and eat the whole pan!! (not in one sitting, of course ;)

Our next recipe feature is this wonderful recipe for Paleo Stuffed Peppers from Living Crunchy.  You can use chicken or beef in this fabulous grain-free dish.

I am intrigued by the cauliflower rice in this recipe.  I haven't tried to make this before and I think it sounds wonderful.  I love Paleo recipes, especially since I have been doing crossfit and I am inspired by others that live and breathe the Paleo philosophy.  I do a modified Paleo, still including some healthy grains in small portions.  I try not to do extreme anything, since that would pretty much make me crazy!  I have to honestly say that I feel so much better after being wheat-free for the last 4 weeks.  Eliminating wheat seems to work wonders for me and I, honestly, don't miss it.  When you find great substitutions for things that you enjoy.  Eating well is simple.

  1. Thanks again for the feature! You could make a single serving of fudge and eat it all at once ;) But if you want to share then yes, a pan is the way to go. Those peppers look amazing as well - I'll have to try 'em out as soon as it cools down enough to cook! All I feel like eating is fudge when it is this muggy. Thanks again and have a wonderful week.

  3. Thanks for featuring the peppers! I, too, feel fabulous after going gluten-free. The rice is awesome! I always keep some in the fridge to toss in to my recipes.
